Chef Jason's Recipe: Chicken & Guacamole tacos

Having a hard time planning meals for your family this Circuit Breaker period? How about trying out our Chicken and Guacamole Tacos, an exclusive recipe from Culinary Director Chef Jason Jones for our friends over at The Luxe Nomad! The perfect stay-home Mexican dish to spice up your #workfromhome life. It's super easy to throw together for a quick taco night dinner, any night of the week! 

Brine (optional)

- 40 g Salt⁣
- 2 L Water⁣
- 1 sheet Kombu⁣
- 40 ml Agave or Honey⁣
- 35 g Lite Miso⁣

Boil all ingredients. Once boiled, remove & cool. Pour over chicken. Leave overnight in fridge.⁣

Chicken Baste⁣
- ½ tsp Black Pepper freshly cracked⁣
- 15 g Garlic⁣
- 30 g Onion⁣
- 1 tsp Dried Oregano⁣
- Pinch Ground Cinnamon⁣
- ½ tsp Sweet Paprika⁣
- 1 Lemon – zest only⁣
- 60 ml Olive Oil⁣

Blend it all until well incorporated, though keep a little coarse. ⁣

Cooking Instructions⁣
- Pre-heat oven to 220’C.⁣
- Remove chicken from brine, rinse, & dry. Using a brush or gloves, coat chicken with baste.⁣
- Chop some potatoes or carrots, or both. Put in a roasting tray.⁣
- Put the chicken on top of the veggies & place in oven. Set timer for 10 mins.⁣
- Reduce heat to 160’C & reset the timer for 45 mins.⁣
- Once timer ends, remove & rest the chicken, breast down, for 10 mins.⁣
- Allow to cool enough to handle. Then pull all the meat from the bones. Pour roasting juices over.⁣

Guacamole⁣
- 3-4 Avocados⁣
- ½ Red Onion⁣
- 1 Tomato⁣
- 1 small bunch Coriander⁣
- 2 Limes for juicing⁣
- Sea Salt to taste⁣

Dice onion & tomato. Chop coriander. Squeeze limes. ⁣
Cut avocados in half & remove flesh. Mash with a fork. ⁣
Fold in all ingredients. Check salt & acid level. You should taste lime & seasoning. ⁣

SuperSlaw⁣
- ¼ White & Red Cabbages – finely shredded⁣
- ¼ Green Papaya – julienned⁣
- ½ cup Mint Leaves⁣
- ½ cup Coriander Leaves⁣
- 3 tbsps Pomegranate Seeds⁣
- 3 tbsps Macadamia Nuts – toasted & chopped⁣
- 1 Lemon – juice only⁣
- 40 ml Agave or Honey⁣
- ½ tsp flakey Sea Salt⁣
- 50 ml Olive Oil⁣

Mix juice, agave, & oil in a small jar. Close the lid & shake well. ⁣
Mix all other ingredients thoroughly. Just before serving, toss with dressing.⁣

To serve⁣
Warm some tortillas on both sides & wrap in a cloth. Cut some limes into wedges. Assemble everything & serve with tequila!
